Description
Brinjal, also known as eggplant or aubergine, has a smooth, glossy, purple skin and a white or green flesh that is spongy in texture. Brinjal has a slightly bitter taste when raw but becomes tender and flavourful when cooked. Brinjal is a good source of dietary fibre, vitamins B6 and K, and minerals such as potassium and manganese. It also contains antioxidants and is often used as a meat substitute in vegetarian dishes.
